I fermented something new every week for 30 days. To be more precise, I committed to fermenting something new every week for 30 days, which meant that I had four different fermentation projects going on during the month. The appeal of improved gut health combined with a growing interest in the alchemical magic of fermentation made it impossible to resist, even though it sounds ambitious and possibly even a little reckless. A major motivator was the most recent research, particularly the compelling Stanford study from 2024 that showed significant increases in gut microbial diversity and reductions in inflammatory markers after just three weeks of consuming three daily servings of fermented foods.

My desire to experiment was further stoked by the sheer amount of UK volunteer data, which showed improved mood and increased energy with similar consumption patterns. I wanted to personally experience these advantages, & what better way to do that than by delving deeply into the realm of at-home fermentation? Although I kept the official “30-Day Challenge” guidelines in mind, my journey involved more than just adhering to them. It seemed like a reasonable plan to start with one small serving & progressively increase to three or more, switching between dairy and vegetable options. However, I also wanted to push the envelope a bit, investigate the “Fermentation 2.0” trends I’d been reading about, and use novel techniques and unexpected ingredients.

Learning, creating, and hopefully fostering a more vibrant inner ecosystem were my objectives. I chose to begin my first fermentation with a traditional dish that I thought I could handle without too much stress: sauerkraut. The procedure—cabbage, salt, and time—seemed fairly simple. I was excited to try sauerkraut since I had read that it was a highly recommended ferment with advantages for stool consistency and regularity. Another big lure was the possibility of lessening bloating, a recurring minor annoyance.

The Power of Salt and the Common Cabbage. I selected a head of green cabbage that feels substantial and promising—one that is firm and nice. According to what I understood, the main idea behind fermenting vegetables was to produce an anaerobic environment where lactic acid bacteria, which are naturally found on plant surfaces, could flourish and outcompete the spoilage organisms. The salt was essential because it extracted moisture from the cabbage to form its own brine and prevented the growth of undesirable microorganisms in the early stages. The art of preparation is shredding & salting. The first step in the process was to shred.

I chose to use a mandoline slicer, which quickly cut the cabbage into beautiful ribbons. The rhythmic slicing served as a kind of prelude to the slower transformation that was going to take place, making it an unexpectedly contemplative task. After shredding, I moved the cabbage to a big bowl and liberally seasoned it with sea salt. I had discovered that the suggested ratio was roughly two percent salt by weight.

I was reasonably accurate because I had weighed my cabbage. The massage came next. At first, this part seemed a little odd, but it’s crucial. I broke down the cabbage’s cell walls by rubbing salt into it, allowing more moisture to escape. The cabbage softened and released its own aromatic liquid as it started to wilt.

Building an Anaerobic Sanctuary: Packing the Jar. Now that the cabbage had been brined and sufficiently softened, it was time to transfer it into a clean glass jar. The procedure was made simpler by the wide-mouth mason jar I used. Pressing out any air pockets and packing the cabbage down tightly was crucial.

In order to create an anaerobic environment, this is essential. After adding the shredded cabbage, I pressed it down with my fist or a tamper. The Brine: The Preservation of Nature itself. The cabbage started to release its own brine as I pressed, forming a natural liquid that would cover the shredded veggies.

The magic happens in this brine. It contains a lot of the lactic acid bacteria that cause the cabbage to ferment and turn into sauerkraut. I added any leftover brine after the jar was nearly full. It was advised to top the cabbage with a light saltwater solution (one teaspoon of salt per quart of water) if there wasn’t enough brine to completely cover it.

Fortunately, there was a lot of brine released, and my cabbage was generous. Patience and Observation in the Waiting Game. The waiting game started once the jar was sealed (either with an airlock and fermentation weight or a lid that lets gas escape).

In order to catch any possible overflow, I put the jar on a small plate and stored it somewhere cool and dark. According to the official guidelines, depending on the temperature and desired sourness, fermentation can take one to several weeks. I intended to check it every day for indications of fermentation, such as bubbling, a tangy smell, and, of course, the slow emergence of that unique sauerkraut flavor. It felt like a victory, this first week.

I had started a natural process that promised better gut health using raw ingredients. Encouraged by my sauerkraut’s success, I made the decision to increase the difficulty for week two. Another powerhouse of fermented goodness that has always captivated me with its vivid color and strong flavor was kimchi, which caught my attention. This was a logical step after the Stanford study mentioned kimchi as a highly recommended ferment along with sauerkraut.

Also, I was eager to experiment with a new flavor profile and incorporate a fresh strain of good bacteria into my diet. Gochugaru and Napa cabbage’s fiery embrace. I found kimchi to be much more complex than sauerkraut. In addition to fermentation, a tasty paste that coats the vegetables is also produced.

Napa cabbage, gochugaru (Korean chili flakes), fish sauce (or a vegetarian substitute for a vegan version), garlic, & ginger are the main ingredients. Salting and wilting the cabbage is the preparation process. Like sauerkraut, Napa cabbage must be salted in order to extract moisture and start the wilting process. I sliced each quarter of the cabbage thickly after cutting it into quarters. To ensure that every piece was covered, a generous amount of salt was applied.

After that, I left it for a few hours, rotating it now and then, until the leaves became pliable and began to slightly collapse. The cabbage must wilt in order to absorb the flavors of the kimchi paste. Making Kimchi Paste: A Flavor Bomb. Here was where the true artistic talent emerged. I mixed fish sauce, grated ginger, minced garlic, a little sugar to encourage fermentation, and, of course, gochugaru.

Kimchi’s distinctive red color and flavor are derived from the gochugaru. Because I wanted to enjoy the heat without it being overpowering, I used a variety that was moderately spicy. Although my kimchi didn’t directly use food waste, the idea of optimizing flavor from basic ingredients struck a chord with me after reading about “Fermentation 2.0” trends. Coating Every Leaf: The Messy Joy. Once the wilted cabbage had been thoroughly drained and rinsed, it was time for the messy but immensely satisfying part: applying the kimchi paste to every single leaf of the cabbage.

Because gochugaru can be harsh on the skin, I put on gloves & started applying the paste layer by layer. Making sure every strand of cabbage was infused with the vibrant, spicy, umami-rich mixture felt like a culinary ritual. The Fermentation Stage: A New Aroma and Patience. Like the sauerkraut, the coated kimchi was then moved to a fresh jar and tightly packed to eliminate any air pockets. At the top, I left a small gap.

I discovered that kimchi frequently ferments faster than sauerkraut, particularly in warmer climates. My kitchen’s scent changed. A more complex, spicy, & slightly sweet aroma took the place of the sauerkraut’s initial strong earthiness. I was witnessing directly the ability of various fermentations to produce distinctive sensory experiences. By using this colorful dish to introduce a whole new range of bacteria, I was actively working toward that goal of increased gut microbial diversity this week.

As the third week went on, I began to feel more assured about my fermentation skills. My kimchi and sauerkraut were growing well and providing noticeable probiotic boosts. Introducing a second serving and switching between dairy and vegetable options were recommended by the official guidelines for weeks three and four. This seemed like the ideal chance to explore dairy fermentation, and kefir—which is known for having a high probiotic content—was the obvious choice. The Stanford study’s emphasis on different fermented food types for optimal gut health became even more pertinent, and the idea of a drinkable, tart probiotic beverage was alluring.

The Living Culture: Kefir Grain Magic & Milk. The fermentation process of kefir depends on kefir grains, which are a symbiotic culture of bacteria and yeasts rather than real grains. These grains cause milk to ferment, turning it into a thick, tart, and bubbly beverage. Since it’s difficult to make kefir from scratch, I had to find some fresh grains from a local enthusiast.

The Easy Mix: Grains and Milk. The multi-step process of making kimchi contrasts sharply with the remarkably straightforward process of making kefir. I filled a clean glass jar with one or two tablespoons of active kefir grains & fresh whole milk.

With the right care, the grains will multiply; the ratio is not very exact. The secret is to use healthy grains and high-quality milk. Room temperature & a light swirl during the fermentation phase. I let the grains breathe by covering the jar with a loose-fitting lid or a breathable cloth. After that, the jar was kept out of direct sunlight and at room temperature.

The magic occurred over the course of the following day. Kefir gets its distinctive effervescence and tangy flavor from the grains’ consumption of the lactose in the milk, which produced lactic acid, carbon dioxide, and a tiny bit of alcohol. During this time, I would gently swirl the jar a few times to guarantee uniform fermentation.

Straining and Enjoying: The Reward of Tangy Goodness. It was time to strain the kefir after the milk had thickened to a yogurt-like consistency & acquired a nice tang. To extract as much liquid as possible, I gently pressed the grains through a fine-mesh sieve. The cycle could then be restarted by re-culturing the strained grains with fresh milk.

The resultant kefir was delightfully tart, creamy, & slightly bubbly. I enjoyed it on its own, but I also envisioned adding it to smoothies or using it as a base for dressings, further diversifying my intake. In my opinion, this was a big step toward reaching the suggested three servings per day. I wanted to finish my 30-day challenge with a flourish, something that showcased fermentation’s amazing versatility.

The kefir was a cool addition to my staples of sauerkraut and kimchi. For my last new ferment, I used lacto-fermented carrots, which are a little less traditional but very satisfying. The meta-analysis confirming improved bowel regularity and stool consistency emboldened me to explore more vegetable ferments, & carrots, with their natural sweetness, seemed like a promising candidate to create a pleasingly tangy side dish. The Alchemy of Carrots: Sweetness Meets Sourness.

Lacto-fermented carrots are a lovely example of how fermentation can change well-known flavors. Lactic acid is produced from the carrots’ natural sugars, resulting in a delightful sweet-and-sour profile that is complex and refreshing. Using natural fermentation instead of vinegar, I imagined these as a healthier substitute for pickled carrots. The key to preparing carrots is simplicity. I picked crisp, fresh carrots and just gave them a quick wash. I decided to ferment them whole, but they could also be sliced or julienned.

Making sure they fit tightly into the fermentation jar is crucial. The intention is to make a brine that, like kimchi and sauerkraut, will naturally ferment the carrots. Salt, water, and flavor enhancers are used to make the brine. I used filtered water and sea salt to make my brine, aiming for the standard 2 percent concentration. However, I wanted to add a bit more flair this time.

I added a couple of garlic cloves, a pinch of mustard seeds, and a few sprigs of fresh dill. These aromatics would impart their flavors to the carrots, resulting in a more complex finished product. I was particularly drawn to the “Fermentation 2.0” trend of using a wider variety of ingredients for flavor. A promise of goodness and a splash of color in the packing and waiting game.

I made sure the carrots were submerged by packing them firmly into a clean glass jar after the brine was ready & had cooled a little. After that, I covered them with the brine, being careful to leave an inch of headspace at the top. To keep the carrots submerged and stop any from rising above the brine, I employed a fermentation weight. The jar was sealed with an airlock lid that let gases out but kept oxygen out. The Taste and the Expectation: A Tangy and Sweet Disclosure.

I put the jar in a cool, dark location and waited, just like I did with my other ferments. I noticed the telltale symptoms of fermentation over the course of the following few days: tiny bubbles rising to the surface, a faint cloudiness in the brine, and a developing tangy aroma. The flavors started to blend as the carrots gradually lost their vivid orange color.

I was thrilled when I eventually had a taste. They had a delightfully tangy, slightly sour finish, a natural sweetness from the carrots, and a nice crispness. They differed greatly from the tasteless pickled carrots I had previously encountered. They were vibrant, intricate, and incredibly flavorful. This last week strengthened my conviction that fermentation has the ability to produce not only nutritious food but also incredibly tasty food.

The Aftermath: My 30-Day Experience with Fermentation and Beyond. I can honestly say that my 30-day commitment to fermenting something new every week was one of the most fulfilling culinary and health-conscious projects I’ve ever worked on. With jars of bubbling sauerkraut, spicy kimchi, tart kefir, and sweet-sour carrots becoming a common sight, my kitchen became a colorful probiotic incubator. My gut and beyond are affected. My general digestive health was the biggest shift I observed.

My bowel regularity improved & the persistent slight bloating I frequently experienced significantly decreased, as the meta-analysis indicated. In line with the UK volunteer data, I also noticed a slight change in my energy levels. I can’t quite put my finger on it, but I felt more… at ease.

There was a general sense of less internal “noise” in response to the Stanford study’s findings about decreased inflammatory proteins. Also, it is extremely encouraging to consider the possible long-term advantages, such as the associated 20 percent lower risk of colon cancer. Beyond the Obstacle: Including Ferments in My Diet.

This challenge served as a springboard for a new eating style and was more than just a 30-day experiment. I’ve discovered that including fermented foods in my daily routine is enjoyable rather than a chore. Now, I usually have a dollop of kimchi or sauerkraut for breakfast, & I usually add some fermented carrots to my lunches. My morning smoothie now always includes kefir, which gives it a strong probiotic boost and a creamy tang. It gives me confidence to know that I can make these healthful foods at home with basic ingredients and a little perseverance.

Accepting “Fermentation 2.0” & Upcoming Experiences. My creativity has also been stimulated by the “Fermentation 2.0” trends that I have read about. I’m excited to learn more about the concept of utilizing food waste to produce innovative ferments. The possibilities seem limitless—imagine a sauce made from the pulp of juiced fruits and vegetables, or a sourdough made from spent grain from a nearby brewery. My 30-day challenge has sparked a passion that transcends the original objective.

I’m captivated. Now that I’m constantly searching for new tastes, textures, and methods to nourish my body from the inside out, I’m thinking about doing fermentations every week or even every two weeks. This trip has taught me that the world of fermentation is about embracing a straightforward, age-old practice that has significant advantages for our palates & health rather than just the most sophisticated recipes or the most recent research.
